Carob Energy Balls:

A Healthy and Delicious Snack for Busy Mums

You need to take care of your kids, your home, your work, your partner, and yourself. And sometimes, you barely have time to eat, let alone prepare a healthy and delicious snack.

But don’t worry, I have a solution for you. These carob energy balls are the perfect snack for busy mums like you and me. They are vegan, gluten-free, and refined sugar-free, and they taste like chocolate! Yes, you heard me right. Chocolate!

Carob is a fruit that grows on a tree in the Mediterranean region. It has a sweet and nutty flavor, and it is often used as a substitute for cocoa powder. Carob is rich in antioxidants, fiber, calcium, iron, and magnesium, and it has no caffeine or oxalates, which can interfere with calcium absorption. So, you can enjoy these carob energy balls without feeling guilty or jittery.

These carob energy balls are made with simple and wholesome ingredients, such as dates, cranberries, walnuts, pumpkin seeds, millet flakes, chia seeds, and MCT oil. Dates and cranberries provide natural sweetness and help bind the balls together. Walnuts and pumpkin seeds add crunch and healthy fats. Millet flakes and chia seeds add fiber and protein. MCT oil is a type of fat that is easily digested and used for energy. It also helps keep the balls moist and soft.

My recipe

Ingredients:

  • 100 ml filtered water

  • 3 medjol dates

  • a handful of dried cranberry

  • 75 gr walnuts

  • 75 gr pumkin seeds

  • 3 tbsp millet flakes

  • 2 tbsp chia seeds

  • 2 tbsp carob powder

  • 1 tbsp MTC oil

To make these carob energy balls, you will need a blender or a food processor, a mixing bowl and an airtight container to store.

And the best part is, it only takes 15 minutes to make them.

Here are the steps:

 

Preparation:

  • Heat up the water and leave the dates and cranberries to soak for 20 minutes

  • Grind the walnuts and pumkin seeds and add to medium bowl

  • Add the flakes, chia, MCT oil, carob powder and mix well

  • In a food processesor blend the dates, cranberris and water till it becomes a paste

  • Add the paste to the other ingredients and combine well.

  • Let it set for 20-30 minutes

  • Form small balls (I used a teaspoon as a measure).

  • You can coat them in coconut flakes or have them without coating

 

These carob energy balls are perfect for when you need a boost of energy, a sweet treat, or a healthy snack. They are also great for kids and adults alike. You can customize them with your favourite nuts, seeds, dried fruits, or spices. Try adding some coconut flakes, almond butter, vanilla extract, or cinnamon for extra flavour.
