Nut free energy balls

Ingredients:

  • Leftover oatmeal from making milk (100 gr dried oats)

  • 2 tablespoon grounded flaxseeds

  • 2 tablespoon chia seeds

  • 2 tablespoon carob powder

  • Approx. 1 tablespoon agave syrup

  • Shredded coconut for coating (optional)

Instructions:

  1. In a large bowl, mix together all the ingredients except the coconut. You may need to adjust the amount of agave syrup depending on how sweet you like your energy balls.

  2. Refrigerate the mixture for a couple of hours to let it set. This will make it easier to form the balls and allow the seeds to absorb the moisture.

  3. Scoop out about a teaspoon of the mixture and roll it into a ball with your hands. Repeat with the rest of the mixture.

  4. If desired, coat the balls with shredded coconut for extra crunch and flavor.
