Apricot & Nut Energy Balls Recipe
🌿 Ingredients
✨ 10 dried apricots (organic to avoid sulfites)
✨ 50ml warm water
✨ 100g almond meal
✨ 50g ground pecans
✨ 2 tbsp ground flaxseeds
✨ Zest of 1 organic lemon
👩🍳 Instructions
1️⃣ Soak the apricots in warm water for a few minutes, then blend into a paste.
2️⃣ In a bowl, mix the apricot paste with all the other ingredients.
3️⃣ Form small balls with your hands.
4️⃣ (Optional) Coat them with shredded coconut, sesame seeds, or enjoy them as they are!
Store them in the fridge for a few days—if they last that long! 😉
